This Mychef rapid cooling cell features an AISI 304 stainless steel architecture, ensuring enhanced corrosion resistance and impeccable hygiene standards for high-output kitchens. The brushed stainless steel exterior finish guarantees longevity and simplified daily maintenance.

Capacity & Configuration

The unit accommodates 15 GN 1/1 levels (size 325 × 530 mm), compatible with all professional trays and grids. The left-hand opening allows optimal integration into existing production lines. Maximum structural load of 171 kg.

Thermal Performance

Extended operating range from 3°C to 90°C with a cooling power of 3820 W. Three distinct cycles: Soft Chilling for delicate preparations, Hard Chilling for dense or fatty products, and negative cooling by micro-crystallization capable of bringing the core from 90°C to -18°C in 240 minutes.

Control & Maintenance

Digital interface equipped with a waterproof membrane keypad for programming by time or temperature. Included temperature probe for precise monitoring. Removable runners, rounded corners, and automatic defrosting facilitate cleaning operations. Automatic switch to maintenance mode at the end of the cycle.
