Bimetallic Construction

This cooking unit combines AISI 304 and AISI 430 stainless steel for enhanced resistance in demanding environments. Corrosion and aggressive chemical agents do not compromise the equipment's durability. Its compact footprint of 610 × 990 × 620 mm accommodates 4 GN 1/1 levels, optimizing productivity in limited spaces.

Dual Heating Mode

The appliance features two complementary thermal systems: adjustable convection from 50°C to 270°C ensures browning and caramelization, while direct steam from 100°C to 120°C preserves the texture of delicate preparations. Manual steam injection allows precise humidity control, from flaky pastries to vegetable dishes.

User Comfort

The reversible double-glazed door ensures effective thermal insulation while allowing cycle monitoring without opening. The mechanical timer 0-120 minutes includes a continuous operation position for long treatments. The standardized hydraulic connection comes with an integrated drain simplifying maintenance.
