The equipment features 5 levels of storage accommodating trays and racks measuring 325 × 530 mm in compliance with the gastronorm 1/1 standard. The configuration also allows for the insertion of EN 600 × 400 mm trays, particularly appreciated for pastry applications on specific versions.

Thermal Cycles

Three distinct programs control thermal transitions: Soft Chilling mode preserves delicate textures through gradual cooling from 90°C to 3°C in 90 minutes, Hard Chilling mode handles dense or fatty preparations within the same timeframe, while the negative chilling cycle reaches -18°C in 240 minutes through controlled microcrystal ice formation.

Operational Features

The system incorporates a core probe for precise internal temperature monitoring of food products, with the ability to switch between time-based or probe-based regulation according to established protocols. Removable runners and rounded edges facilitate cleaning operations, while fluid drainage positioned at the bottom of the well optimizes hygiene. Automatic defrost and automatic transition to maintenance phase at cycle end reduce manual interventions. Temperature range compliant with HACCP requirements for cold chain safety.
